Squid {Calamari} Salad Recipe




Remember back when I promised to share those two salad recipes from our Christmas lunch {back here}... 

Well, here is the first one! :) 

My mother made this gorgeous salad and yes, it was as delicious as it is beautiful.




You will need:

1 red onion, very finely sliced
2 tablespoons red wine vinegar
750 grams watermelon, rind off and sliced
4 radishes, very finely chopped
100 grams feta, cubed
½ bunch mint leaves
Squid/calamari tubes
Extra virgin olive oil to drizzle
Salt and pepper

The salad part:

Combine the onion and vinegar in a small bowl and set aside for about 10 minutes or longer.
Drain.
On a platter, combine the onion, watermelon, radish, feta and mint.
Season.

The squid/calamari part:

Slice the squid tubes in half and score the insides.
Cut into quarters (make each piece big enough to accommodate the curling process).
Cook on a griddle pan or a BBQ, to your liking (remember not to overcook these babies as they can become quite rubbery).
Add them to the salad.

Drizzle with extra virgin olive oil.
You can also sprinkle micro salad leaves or flowers on top, just to pretty it up a bit.
